Recipe

  1. Heat butter and olive oil, preheat oven to 350°F
  2. Add garlic, soy sauce, lemon juice, honey, and some water on low-medium heat
  3. Season salmon, and sear skin-side down for 45 seconds in oven-safe pan
  4. Pour sauce over salmon and baste
  5. Add salmon + sauce to oven, broil for 1-2 minutes
  6. Baste salmon with sauce, increase to 380°F for 1-2 minutes
  7. Baste salmon again, increase to 430°F for 1-2 minutes
  8. While salmon is in oven, cook shallots and butter on medium heat for 45 seconds
  9. Add spinach, salt, and pepper and sauté
  10. Plate with fresh garlic (optional)

Notes

Don't overcook the salmon, don't burn the glaze

Use minimal oil when searing the salmon
